80g Inaniwa udon
50g sea bream fillet
150g turnip
wasabi, as needed
yuzu zest, as needed
water celery, as needed
300cc dashi
15cc light soy sauce
1.5g salt
starch (or kudzu) dissolved in water, to thicken
