Recipes:
Caramel Apple Cake:
1 1/2 cups butter
2 cups brown sugar
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
3 large eggs
2 3/4 cups flour
1/4 cup cornstarch
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3 cups peeled and diced apples
Mix butter, sugar, spices, and vanilla.
Whisk the eggs in one at a time.
Add flour, cornstarch, baking soda, and salt.
Fold in the apples.
Pour into bundt pan, and smooth out.
Bake at 325 for 60 mins or until a toothpick inserted comes out clean.

When the cake is cool, make the frosting (don't make it ahead because it hardens quickly).
Caramel Glaze:
1/4 cup butter
1/3 cup heavy cream
1 cup brown sugar
1/4 teaspoon salt
1 1/2 cups icing sugar
1/2 cup chopped pecans
Heat butter, sugar, and cream in saucepan, stirring constantly.until it boils.
Remove from heat and blend in icing sugar. (If frosting is to thick, add a little cream).
Immediately pour over cake and top with crushed pecans.

Pumpkin Cheesecake Bars with Streusel Topping:
Crust:
12 sheets graham cracker crumbs
1/4 cup brown sugar
1/2 cup butter, softened
Cheesecake:
4 packages cream cheese, softened
1 1/2 cups brown sugar
pinch of salt
3 teaspoons vanilla extract
4 eggs'1 teaspoon cinnamon
2 teaspoons pumpkin pie spice
1 (15 oz) can pumpkin puree
Streusal Topping:
1 cup brown sugar
1 cup flour
1/2 cup oats
1/2 teaspoon cinnamon
1/2 cup butter, softened
2 teaspoons vanilla
Combine crust ingredients, and mix till a "dough" forms. Press evenly into a 9x13 pan and bake at 350 for 8 mins.
In another bowl, beat cream cheese until creamy. Add sugar, salt, and vanilla. Add the eggs one at a time until each is combined.
Pour half of this mixture on top of prepared crust.
To the rest, add the pumpkin puree, cinnamon, and pumpkin pie spice and stir until combined.
Carefully pour pumpkin mixture on top of cream cheese layer, being careful not to mix the two.
Bake at 350 for 30 mins.
Stir together all the streusel ingredients and sprinkle over pumpkin cheesecake layer.
Bake for another 25-30 mins.
Cool completely before cutting.
