Recipe for: Fluffy cakes with cheese
NECESSARY PRODUCTS:
flour - 1,250 kg. (sifted)
warm water - 200 ml.
warm fresh milk - 200 ml.
sugar - 2 tbsp.
salt - 2 tsp.
proteins - 2 pcs.
oil - 100 ml.
cow butter - 100 g.
dry yeast - 22 gr
yolks - 2 pcs.
fresh milk - 2 tbsp.
sesame for sprinkling
cow cheese - 300 g (crushed).
METHOD OF PREPARATION:
In the bowl of the mixer, mix the water, milk, sugar, egg whites, oil and yeast (Use the dough attachment). Turn on the mixer at a slow speed and gradually add half the flour (If you prepare the dough by hand, the method of preparation is the same). Add the salt and gradually add the remaining flour. Finally add the butter. Knead until you get a smooth soft dough. Place the finished dough in a bowl and cover with a lid or towel. Leave the dough to rise for an hour.
Knead the slightly risen dough to let the air out. Divide the dough into 4 equal parts. And divide each quarter into 8 equal parts. So you should get 32 equal parts. Form 32 balls.
Shape the loaves by stretching each ball slightly with your hands. Put a little cheese in the middle and press so that it closes. Shape with your hands, lightly press on top. Arrange in a baking tray. Cover with a towel and leave to rise for another 30 minutes.
The recipe is for 2 trays of 16 loaves. If you want a smaller amount, divide the recipe in two.
Beat the yolks with 2 tbsp. fresh milk and spread on the bread. Sprinkle with sesame seeds.
Bake in a preheated oven at 200 degrees with a fan, at the bottom of the oven, for about 10-13 minutes. They happen quickly and you have to watch them.
