No Italian recipe book would ever dare suggest you cook pasta this way, and yet here in Bari, Italy, this dish has been a staple for decades. Chef Celso from Urban l'Assassineria Urbana showed me how it’s prepared. You thought Italians were food purists? Today I’m going to change your mind.
