Got garlic scapes? Garlic scapes can be found at Farmers Markets in late Spring or you can grow hard neck varieties of garlic & harvest your own. Garlic scapes are delicious, this compound butter is just one way to enjoy them with the added benefit of preserving for later use. I made some French bread, slathered this on, toasted it & it was amazing garlic bread!
So easy- trim the flower end off the scape, rough chop, process n a food processor. Cream your butter, add the scapes, mix well & enjoy or freeze for later.
