Hello☺Thank you for watching my video.
Today I made a creamy cheese tart with seasonal figs.
The tart dough is scraped and topped so it is crispy and savory.
For the baked cheese cake, mix the cream cheese and rice flour together first so that the flour will be smooth without lumps.

▷Ingredients (Φ15cm)
■Tart dough
50 g rice flour
15 g ground almonds
Pinch of salt
50 g unsalted butter
1 egg yolk

Cheese tart
200 g cream cheese
50 g sugar
12 g rice flour
1 whole egg
1 egg yolk
100 ml heavy cream
1 teaspoon lemon juice
2 figs

Meringue
2 egg whites
20 g sugar
1 teaspoon lemon juice

▷How to make:
1. Make the tart dough. Mix rice flour, ground almonds and salt. Chop the cold butter into cubes and mix with the flour mixture.
2. Add the egg yolks and mix while chopping until evenly combined. Freeze half of the mixture, place the other half in a mold and refrigerate.
3. Make the cheese tart. Add the sugar and rice flour to the cream cheese mixture and mix well.
4. Add egg yolks and whole eggs, mix well, then add heavy cream and lemon juice.
5. Peel figs and cut into 6 equal pieces.
6. Make the meringue. Add sugar and lemon juice to egg whites to make meringue.
7. Arrange the figs in the chilled mold, pour the cheese tart and top with the meringue. Put the frozen tart dough on top of the meringue.
Bake in a preheated oven at 180℃ for 35-45 minutes. Remove from heat and refrigerate overnight.
