00:00 - To start, the basis of potato dumplings is potatoes. I prefer to use red potatoes, as they are drier and mealier, which makes them perfect for this recipe. If you don't have red potatoes available, any type of potato is fine as long as it's dry and mealy. The first thing to do is wash the potatoes and leave them whole, of the same size, so that they can all be cooked together.
01:06 - It's time to boil potatoes. Boil some salted water and add the potatoes. If you have old potatoes in your cellar, they're even better because they're drier. The cooking time varies from 30 to 40 minutes. Check doneness by inserting a toothpick into the potato: if you can pierce it easily, they're ready. Drain the potatoes and peel them while still hot.
02:18 - Take the flour and spread it on your work surface. Mash the potatoes with a potato masher over the flour and mix with an egg and a little salt. Don't pay too much attention to the dough or the dumplings will become too firm. Form a loaf with the dough and cut into small pieces which you roll up on a fork or a gnocchi line to give the typical shape.
04:32 - Now the potato dumplings are ready to be cooked. Boil some salted water and add the gnocchi. Make sure the water doesn't boil too hard or the dumplings could break. When the gnocchi float to the surface, they're ready! Drain and season them as you prefer.
