• Delicious fermented mushrooms! I show you 2 methods on how to ferment mushrooms of any variety.
NOTE: At the end of the video I show you the final product of the fermented videos. The top surface of the mushrooms have oxidized and are a darker color. I said this was normal. ALLOW ME TO CLARIFY! The mushrooms should remain covered with the brine the entire time they are fermenting having NO oxygen exposure and NOT oxidizing. This also prevents mold growth. The oxidization I was referring to in the video comes AFTER fermenting when the cabbage leaf and weight are removed and then the mushrooms are placed in the refrigerator for storage. Once in the fridge if the mushrooms float up and are exposed to air, now they will oxidize but the refrigeration will prevent mold growth. Let me know if you need further clarification. FERMENTATION WEIGHT NOTE: I no longer recommend using a rock as a fermenting weight since some rocks have a softer mineral content and/or have 'grit' that can dissolve in water. Please watch the following video:
