RECIPE: PERFECT CHOCOLATE MIRROR GLAZE
125 gm water approx 1/2 cup
195 gm sugar approx 1 cup
35 gm cocoa approx 1/4 cup
7 gm 1 envelope gelatin 7 gm -4 sheets x 2gm
22 gm glucose or white corn syrup approx 1 Tbsp.
