Hi everyone, to day I will show you How to make pig ears soaked with Lemongrass and Green Kumquat. This is a delicious dish is easy to do. It can be eaten with rice paper, vegetable, sauce fish. Or simplest way is used to drink with beer.

As you can see, this is the ingredient required
- 1 pig ear
- 400ml water
- Green Kumquat
- Lemongrass
- Lemon leaf (it can be replaced by Green Kumquat leaf)
- Onion, ginger, garlic, chilli
- A little salt, sugar
- 100ml sauce fish
- 2-3 tablespoon rice vinegar

Step 1: Clean shave hairy pig ears, use vinegar and salt to wash pig ear carefully.
Boiled pig ears with ginger, lemongrass, onion and a little salt in 15-20 minutes.

Step 2: Pig ears after done cooked drop right into the bowl of cold water with a little lemon to keep an ear on the hunt of the surface. Cold ear then let it dry in the air.

Step 3: Prepared soaking sauce
Prepared a cooking pot and put into it:
- 400ml Water
- 100ml Fish Sauce
- 3 Tablespoons Rice Vinegar
- 2 Teaspoon Salt
- 2 Teaspoon Sugar
Stir well until sugar dissolved well and cook until boil. Wait until soaking sauce cool down.

Step 4: Sliced Lemongrass, Garlic, Chilli, Lemon leaf, Green Kumquat

Sliced the pig ear (after drained) into a small pieces.

Step 5: Soaking Sauce must be completely cool before we put all things in Step 4 into it. Keep our dish in fridge 24 hours before use!
