Ramen noodles
3 cups all purpose flour
1/2 teaspoon salt
1 cup room temp water
1 1/2 teaspoons lye water (link below or available at most Asian grocery stores)
Mix flour and salt in a bowl and set aside.
Mix lye water into water and pour over flour mix.
Mix with a chopstick or spoon until a loose dough.
Knead with hand until it becomes move dough like.
Wrap with plastic wrap and let rest for 1 hr.
Roll out and cut using a pasta maker.
Cook in boiling water for 3 minutes. Don't overcook.
*Use cornstarch on your dough to keep it from sticking together when you roll it into noodles.
