70g egg yolks (about 4 egg yolks)
1 g Vidofix (thickening and stabilizing agent)

Pinch of salt

 Chocolate gelato
400 ml milk
200 ml fresh cream (47% fat)
180 g chocolate (I used 70%)
60 g glucose
50 g granulated sugar
1 g Vidofix (thickening and stabilizing agent)
Pinch of salt

 Raspberry sorbet
250 ml water
90 g granulated sugar
60 g glucose
1 g Vidofix (thickening and stabilizing agent)
250 g raspberry puree (sweetened)
