Ingredients for 14 vegetable medallions
2 Cups of raw dried Chickpeas
4 cups of water
1 small onion
3 garlic cloves
Pepper and salt to taste
Seasonings to taste: 1 Tablespoon onion, garlic and dried parsley (optional)
To coat:
1/2 Cup of water
1/2 Cup of Rice Flour
Salt and pepper to taste
seasonings to taste
Toasted manioc flour, or any gluten-free flour for coating
2 Tablespoons of ground sesame seeds.
Salt and pepper to taste
2 teaspoons of turmeric to taste

Vegetable Nuggets 39 units (can be frozen)
1 Cup of grated carrot
parsley or coriander to taste
1 small onion
Seasonings to taste (curry and paprika)
Salt and pepper to taste
2 Tablespoons ground sesame seeds (optional)
1 Cup of toasted Cassava Flour or any gluten-free flour for coating

Ingredients for Vegetable Mayonnaise
1 sweet potato
1 small carrot
2 teaspoons of black or curry salt
Salt, oil and lemon juice to taste
