🌰 Chestnut Compote – Intermediate – For 3 500ml bottles – 3 hours (except the chestnut-soaking time)
🌰 Ingredients: chestnuts 1.2kg (1kg after peeling), sugar 500g, 2 tbsp of baking soda, 2 tbsp of soy sauce
1.Remove the outer layer of skin from the chestnuts.
(It is easier to remove the chestnut skin if the chestnut is soaked in lukewarm water for a half day.)
2.Pour water into a pot so that the chestnuts are covered. Then add the baking soda. Soak the chestnuts for 10 hours there.
You can remove the inner skin stuck in the folds with a toothpick.
(The bitter taste of the inner skin is removed by soaking them in baking soda water.)
(You can remove the inner skin stuck inside easily after it is soaked.)
3.Boil them in the same water in the pot over low heat for 20 minutes.
(Skim off any scum or foam while boiling.)
4. Drain and rinse them in a strainer. And boil them again in new water over medium low heat for 20 minutes.
Repeat the same process of boiling twice.
(Boiling chestnuts 2 to 3 times removes the bitter taste and makes the inner skin soft.)
5. Add sugar and boil them again in new water over medium low heat for 20 minutes.
6.Once the water is boiled down to two-thirds, add the soy sauce. Boil it down for another 10 minutes before turning off the heat.
(Adding 2 tablespoons of rum or wine along with the soy sauce can make the chestnuts taste better.)
7.Pour the chestnut compote into a jar, sterilized in boiling water, and store in the fridge.
(You can store it for up to 2 to 3 months in the fridge.)
