One of the thing I crave the most while on Keto diet is French pastries. One day, I walked pass my local bakery they had fresh baked mocha choux just came out, the buttery pastry and coffee smell made my mouth watering. So I came home started experiment for a Keto friendly pastry recipe without comprise the texture and taste. Here we go it is! This Keto cream puffs is easy to make and it is just as good as the real ones. Crunchy outside, soft puffy inside with soft vanilla custard…one bite with a sip of coffee, it made my day! I hope you will enjoy it as much as I do :)
Since I just love coffee so much, I've included both classic vanilla Crème and coffee cream icing recipes. Both cream recipe below will be enough to pipe half batch of the keto cream puffs (12), double the recipe if you decide to go with one flavour only. And…they are also good for any other keto cake icings!
Choux Pastry (bake appx. 24 small Keto cream puffs)
100g blanched almond flour (https://amzn.to/3gsz8GI)
35g coconut flour (https://amzn.to/3Gwl2i9)
4g baking powder
4g xanthan gum
250ml water
80g unsalted butter
Pinch of salt
½ teaspoon (2mL) vanilla extract
2 large eggs at room temperature
Bake at 190°C (375°F) for 10 minutes, reduce to 170°C (338°F) for another 15 minutes.
Take the puffs out to let it cool down completely before piping.
Crème Diplomat (Vanilla Custard Cream) (for piping 12 puffs)
2 large egg yolks
2 tbsp powdered Lakanto sweetener (or powdered erythritol) (https://amzn.to/3gNwGL6)
1 pod of vanilla seed ( or 1/2 tsp vanilla paste)
300g thicken heavy cream
1 tsp gelatin powder + 1tbsp water
Mocha Cream (for piping 12 puffs)
1/4 cup (60ml) thicken heavy cream
2 tbsp powdered Lakanto sweetener (or powdered erythritol)
1 tsp instant coffee
125g mascarpone cheese
1 tbsp cocoa powder

生酮泡芙酥皮 (此方可以烤24個小泡芙)
材料:
100克去皮杏仁粉
35克椰子粉
4克泡打粉
4克黃原膠
250毫升清水
80克無鹽黃油
少許鹽
半茶匙香草精(無糖版)
2 個大號雞蛋
190°C (375°F) 預熱烤箱烤10分鐘,降溫到170°C (338°F)繼續考15分鐘。晾涼後再擠奶油。
香草奶油餡料 (擠12個泡芙)
2個蛋黃
2大匙羅漢果糖粉(或是赤藓糖醇粉)
香草籽 (一整條香草莢)
300克重奶油
1茶匙吉利丁粉加一大匙水攪勻
摩卡咖啡奶油 (擠12個泡芙)
1/4 cup (60 毫升)重奶油
2大匙羅漢果糖粉(或是赤藓糖醇粉)
1茶匙速溶咖啡液
125克馬斯卡彭乳酪
1大匙可可粉
小貼士:
- 生酮泡芙酥皮的方子可以做大概24個小泡芙,奶油的份量是可以各擠12個泡芙。如果只做一種口味,把奶油方子的份量翻倍即可。
- 兩款奶油味道和穩定性都很好,也可以拿來裝錶其他類型的生酮蛋糕。
