Today we are making a lentil loaf (like a meatloaf)
1 cup rolled oats
1 cup cooked brown lentils
1 cup grated carrots
1/2 cup finely chopped onions
1/2 cup finely chopped mushrooms
1/4 cup tomato sauce
2 tablespoons olive oil
2 tablespoons soy sauce
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
1/2 cup breadcrumbs
1 tablespoon tomato paste
2 tablespoons flaxseed meal
Steps
Preheat your oven to 375°F (190°C).
In a large bowl, mix together the oats, lentils, carrots, onions, mushrooms, tomato sauce, olive oil, soy sauce, thyme, basil, oregano, salt, and pepper.
Stir in the breadcrumbs, tomato paste, and flaxseed meal until well combined.
Grease a 9x5 inch (23x13 cm) loaf pan and transfer the mixture to the pan.
Bake for 45 minutes or until the top is golden brown.
Let it cool for 10 minutes before slicing and serving.
