Ingredients for 4 x 500g pies
BOILED WATER PASTRY
580g strong plain flour
205g lard
265g boiling water
10g salt
PORK PIE FILLING
800g lean pork shoulder (coarse minced)
200g pork back fat (fine minced)
15g fine salt
8g freshly ground white pepper
