Making Dondurma Turkish Stretchy ice cream Part 1

In todays video I talk about Dondurma (Traditional Turkish Ice Cream) and make it at home using traditional ingredients. It's a fair amount of work but it's the best version i've tried and i have tried MANY.

What you will need is:

600g Goats milk (2.5 cups)
200g Whipping Cream (0.8 cups)
150g Sugar (2/3 cup)
3g Mastic Gum (.5tsp)
15g (1 tbs) Salep Orchid Root Power (NOT the 'off the shelf" salep drink)
+ your flavoring of choice

You will also need a hand whisk, stand mixer and your ice cream machine and a good strong arm!

If you follow the video without deviation, you will get almost perfect homemade dondurma. It sits at room temperature for a long time without melting (I will show this in the PT2 video) as it's supposed to and can be eaten with a knife and fork (again, as it should be).
