Ingredients (Diana Aw)
1. Yellow noodle
2. Long beans, cut smaller
3. Shredded Carrot
4. Green and red chilli, sliced
5. Green chilli padi 2pcs, smashed
6. Tomato 4 small pieces
7. Fried Tofu, cut small pieces
8. Egg 1pc
9. Few slices of cucumber
10. Tomato sauce
11. Calamansi 1pc

Chilli sauce
1. Dried Chili 10pcs, remove seeds
2. Garlic 3 cloves, cut halves
3. Shallots 3pcs, sliced

Seasoning
1. Sugar 3tsp
2. Salt 1/3tsp
3. Tomato sauce 1tbsp
4. Fish sauce little
5. Dark soya sauce little

Method
1. Heat a pot of water and add in dried chilli. Cook for 10sec and off heat. Then soak for 3min to soft. Transfer to the blender and add in garlic and little water. Blend till smooth
2. Heat wok with oil and add in shallots. Stir fry till aromatic and add in blended chilli. Cook till oil extracted. Then add in sugar and salt and mix well. Lastly add tomato sauce and mix well. Set aside
3. Heat wok with oil. Add in egg and stir fry till cooked. Then add in long beans, carrots and chilli padi and stir fry till aromatic. Add chilli paste (step 2) and stir fry. Then add noodles and continue to stir fry till aromatic.
4. Add some water in, together with chilli, tomato, fried tofu and fish sauce and stir fry till a bit dry. Lastly add dark soya sauce and stir fry.
5. Dish up and garnish with cucumber slices, tomato and calamansi.
6. Serve and enjoy! 💕
