I think gingerbread spices is my all time favourite in flavours. Not only do these spices marry so well in desserts but the aroma's in the house when baking is magical. I thought, why reinvent the wheel and decided to show you a typical recipe that others have also showcased. These Keto Gingerbread Cookies are so delicious that you wouldn't believe that each cookie has only 1g Net carbs and 85 calories.
Ingredients
2 cups Almond Flour
1/2 cup Brown Sugar Sweetener - I used Stevia
1 tsp Baking Powder
1/2 tsp Ground Cloves
1 tsp Cinnamon
1 tsp Ground Ginger
1/2 tsp Nutmeg
1/2 tsp Allspice
2 tsp Vanilla Extract
1/4 cup Unsalted Butter (softened)
1 Egg (large)
Gingerbread cookie cutters
Icing Sugar Ingredients
1/2 cup Powdered Sugar (Keto)
1 tbs Water
Instructions
In a bowl, add all of the dry ingredients and mix until combine. In another bowl, whisk together the butter, egg and vanilla until well combined. Add the dry ingredients to the wet ingredients and fold through until well combined. Use your hand and knead the dough until able to form a ball. Wrap in plastic wrap and leave in the refrigerator for 30-45 minutes or until chilled.
*Nb, 20 minutes before removing dough from the fridge, preheat oven to 180C or 360F
Lay dough between to pieces of baking paper and and roll to 1cm (.40inch) thickness. Start cutting out your cookie shapes. Repeat this process with the dough until finished.
Bake in the oven for 10-12 minutes and place on cooling rack for ten minutes before adding icing sugar to the cookies.
Mix the icing sugar and water until looks like a paste and start decorating your cookies.
My dough made 17 cookies at 85 calories each and 1g net carbs.
