INGREDIENTS:
1. Bajra(pearl millet) flour - 1 cup
2. Wheat flour - ½ cup (for binding)
3. Besan(gram flour) - ¼ cup
4. Methi(Fenugreek) leaves - ½ cup
5. Coriander leaves
6. Salt
7. Turmeric powder ½ tsp
8. Red chili powder - 1 teaspoon
9. Amchur powder 1 tsp
10. Mustard seeds ½ tsp
11. Sesame seeds 1-2 tbsp
12. Hing(asafoetida) ½ tsp
13. Ginger-chilli-garlic paste 1tsp
14. Sugar
15. Baking soda
16. Lemon
17. Water
18. Oil
19. Green chilies - 1-2 tsp, finely chopped
20. Curry leaves 8-10
INSTRUCTIONS:
Prepare the dough:
1. In a large mixing bowl, combine the bajra flour, besan(gram flour), wheat flour, chopped methi leaves, chopped coriander leaves, turmeric powder, salt, sugar, baking soda and lemon juice.
2. Add a little water and mix everything into a soft, smooth dough. Adjust the water as needed to form a dough that is not too sticky but can be shaped into dumplings.
3. Add a little oil at last.
Shape the muthiyas:
1. Grease your hands with a little oil and divide the dough into small portions.
2. Shape each portion into cylindrical or oval-shaped muthiyas (dumplings). You can make them as long or short as you like.
Steam the muthiyas:
1. Heat water in a steamer or a large pot with a steaming rack. Place the shaped muthiyas in the steamer plate, making sure they don’t stick each other.
2. Cover and steam for about 15-20 minutes or until they are cooked through. You can check by inserting a toothpick/knife into the muthiya; if it comes out clean, they are done.
Tempering:
1. Once the muthiyas are steamed, cut them into small pieces.
2. Heat oil in a pan for tempering.
3. Add mustard seeds, sesame seeds, curry leaves, and a pinch of asafoetida. Let the seeds splutter.
4. Add the cut muthiyas and mix gently.
5. Add salt to taste, sugar, amchur powder and red Chilli powder.
6. Mix everything gently or toss it.
7. At last add some freshly chopped coriander leaves.
Serve:
Methi muthiya can be served warm with green chutney/ tamarind chutney or with tea for a delicious snack.
