My Favorite Beef Lo Mein Recipe EVER!

### Ingredients

- **Beef**: 250 grams (about 8.8 ounces)
- **Noodles**: 300 grams (about 10.6 ounces)

#### Marinade for the Beef:
- Baking soda: 1/4 teaspoon
- Soy sauce: 1 tablespoon
- Oyster sauce: 1 tablespoon
- Shaoxing rice wine: 1 tablespoon
- White pepper: 1/8 teaspoon
- Dark soy sauce: 1 teaspoon
- Cornstarch: 1/2 tablespoon
- Water: 2 tablespoons

#### Noodle Sauce:
- Soy sauce: 1 tablespoon
- Oyster sauce: 2 tablespoons
- Dark soy sauce: 1 teaspoon
- White pepper: 1/4 teaspoon
- Sugar: 1 teaspoon
- Cornstarch: 1/2 tablespoon
- Water: 2 tablespoons

#### Vegetables:
- Onion: 170 grams (about 6 ounces)

### Cooking Steps

1. **Prepare the Beef**: Choose a tender cut of beef and slice it against the grain to about the thickness of a coin.
2. **Marinate the Beef**:
- In a bowl, mix the marinade ingredients (soy sauce, baking soda, dark soy sauce, Shaoxing rice wine, oyster sauce, white pepper, cornstarch, and water).
- Add the marinade to the beef in 3 to 4 batches, massaging it in until it becomes sticky. Drizzle a bit of cooking oil over the beef and let it sit for about 30 minutes.
3. **Prepare the Vegetables**: Slice the onions, cut the carrots into strips, mince the garlic, and chop the green onions, keeping the white and green parts separate.
4. **Cook the Noodles**: Once the water is boiling, add the noodles. Be careful not to overcook them. Test one to ensure there’s no hard center. Once cooked, drain the noodles and set them aside. If not using immediately, rinse them quickly with water to prevent sticking.
5. **Prepare the Noodle Sauce**: In a bowl, combine all the sauce ingredients and stir until well mixed.
6. **Cook the Beef**: Heat a wok and add cooking oil. Once the oil is shimmering, add the marinated beef, spreading it out to cook evenly. Cook until the edges change color, then flip and cook until medium-rare. Remove and let it drain.
7. **Final Cooking**:
- Set the heat to medium. Sauté the onions until fragrant and translucent. Add the garlic and the white parts of the green onions, letting them release their aroma. Then, add the carrots and cook until softened.
- Add the beef and noodles, pouring in the prepared sauce. Use chopsticks to mix everything evenly. Since we’re making Lo Mein, keep the noodles moist and smooth. Stir gently over low heat, allowing the noodles to soak up the sauce. If you want a deeper color, add a dash of dark soy sauce.
- Finally, sprinkle in the green parts of the onions, drizzle some sesame oil, give it a few more stirs, and it’s ready to serve!
