I made an unbaked orange rare cheese cake.
Orange slices are set in jelly to make it look cooler.
Squeezed orange juice in the rare cheese enhances the flavor.
▷Ingredients(φ15cm):
■Rare cheesecake
70g cookies
15g unsalted butter
200g cream cheese
40g sugar
35g water
6g gelatin
200ml heavy cream
20g sugar
1 orange juice
■Orange jelly
200ml orange juice
5g gelatin
■Lemon jelly
7g gelatin
200ml water
30g sugar
10ml lemon juice
8 slice orange
▷How to make:
1. make the rare cheese cake. Break cookies into small pieces in a ziplock and blend with melted unsalted butter. Line a mold with a cookie sheet, fill with cookies and refrigerate.
2. Beat cream cheese with sugar until smooth.
3. Sprinkle gelatin powder over water to soften, dissolve in hot water and add to the mixture.
4. Beat the cream with sugar until loose and add it to (3). Squeeze the juice of an orange and add to the mixture.
5. Pour the mixture into a cookie-lined mold and refrigerate for 1 hour.
6. Make the orange jelly. Measure out 200 ml of orange juice, divide about 2 tablespoons of it, add powdered gelatin, and fluff it.
7. Dissolve the gelatin in hot water, add it back into the orange juice and mix until uniform.
8. Pour the orange jelly over the hardened rare cheese cake and refrigerate for 1 hour.
9. Make the lemon jelly. Sprinkle 50 ml of water with gelatin powder and let it soften.
10. Put sugar, water and lemon juice in a saucepan and heat until sugar dissolves.
Add the orange slices and heat, stirring occasionally, until the mixture comes to a boil.
12. Remove the orange slices and cool.
13. When the syrup has cooled to 50-60℃, add the blanched gelatin and let it dissolve.
14. Place in ice water and cool to about 20℃.
15. Arrange the orange slices on top of the orange jelly, pour in half of the jelly and refrigerate for 10 minutes.
When the jelly has hardened, pour in the remaining jelly and refrigerate for 5 hours.
