Harees

Ingredients:-
• Wheatberries 2 cups, soaked overnight
• mutton/beef 1.5 kg
• Onion 1 big
• cinnamon sticks 3-4
• bay leaves 4
• Black peppercorns 1/2 tsp
• Green cardamoms 6
• Onions 2 medium, thinnly sliced
• Desi ghee 1 cup total

Serving
• Cinnamon powder (optional)
• red chili sliced
• Warm desi ghee

Methods:-
• Wash and soak wheat berries in water overnight. Next day drain and wash it.
• In a big cooking pot, add 1-2 tbsp from 1 cup of desi ghee, onion (1 big) sliced, and spices.
• Saute until the onions are soft and spices are aeomatic. Don't let the color of onions change.
• Add mutton and fry until raw smell goes off. Add salt.
• Now add wheat berries and 8 cups of water. Cover cook for two hours or until meat starts to fall off the bones.
• Take the meat out of the pot and separate bones from meat. Shred the meat and put it back in the pot.
Cook for 2-3 hours more until the berries are mushy.
• Use a ladle to mash it as much as you can. Add 2 tbsp of ghee and mix again.
• Now in a separate pan add remaining desi ghee and fry 2 onions until soft. no need to rurn them golden brown.
• Add the onions to the harees. Mix.
• Add some water and let it cook for 5 minutes.
• Serve in a deep dish with warm deai ghee and red chilies.
• Enjoy as it is or serve with naan or pita bread.
