Gino D'Acampo is in north western Italy visiting the picturesque region of Liguria. His first stop is the pretty coastal town of Camogli, where he meets a family who make a living from pescaturismo - or fishing tourism. They take him out to sea to experience what life is like for the local fishermen. The calm waters and warm sunshine are a perfect accompaniment as the fresh catch is eaten for lunch on the boat. Gino cooks a plate of succulent sea bass in a caper and butter sauce, served with griddled carrots marinated in white wine vinegar, garlic and mint. Then he is off to Recco, a town that is famous for its focaccia. This delectable soft yet crispy flatbread is filled with stracchino cheese. Before he bids farewell to Liguria, Gino rustles up one of the region's most popular dishes - trofie pasta with rustic pesto, green beans and potato.
