Cake with cherries or sour cherries. A simple, delicious and quick recipe
Ingredients:
For the basic composition:
Eggs – 4 pcs.
Sugar – 160 g
Salt – ¼ teaspoon
Flour - 300g
Baking powder 10 g (one sachet)
Vegetable oil – 120 ml
Milk – 120 ml
Vanilla sugar - 10 g (one sachet)
Grated lemon peel - one spoon
For the cream cheese:
Cream cheese - 250 g
Powdered sugar - 50 g
Egg - 1 pc.
Vanilla sugar - 10 g (one sachet)
Cherries – 350 g
Semolina - a spoon
Pit 350 g of cherries using a special device or a skewer. Sprinkle with a spoon with a semolina tip, which will absorb the juice left by the cherries when baking, and mix gently.
We prepare the basic composition:
Put 4 eggs, ¼ teaspoon of salt, 160 g of sugar, 10 g of vanilla sugar in a bowl. Mix with the mixer or with a whisk for 4-5 minutes.
Add 120 ml oil, 120 ml milk, mix.
Gradually add 300 g of flour and 10 g of baking powder. We homogenize everything with the mixer or with a whisk. The result is a thick cream-like composition. Add a spoonful of grated lemon peel. Mix with spatula and set aside.
We prepare the composition with cheese:
Mix 250 g of cream cheese with 50 g of powdered sugar, 10 g of vanilla sugar and an egg. I got a thick, homogeneous cream.
Pour the basic composition into the tray (28x18 cm lined with baking paper and greased with butter) and level with the spatula. Shake the pan 3-4 times.
Spoon small mounds of the cream cheese mixture over the base.
Place the cherries evenly on top of the composition.
Put the tray in the oven preheated to 180˚C for 35-40 minutes. Do not open the oven for 20 minutes.
Let it cool in the pan for an hour.
Remove the cake from the pan and optionally sprinkle with powdered sugar. Allow to cool completely, then cut into pieces only as needed.
