**Ragi Flour Idli Recipe**
**Ingredients:**
1. Ragi flour (finger millet flour) – 1 cup
2. Idli rice – 1 cup
3. Urad dal (split black gram) – 1/2 cup
4. Fenugreek seeds – 1/2 tsp
5. Salt – as required
6. Water – as needed
7. Oil – for greasing idli plates
**Instructions:**
1. **Soak the Ingredients:**
- Wash and soak the idli rice and fenugreek seeds together in water for about 4-5 hours.
- Wash and soak the urad dal separately for the same duration.
2. **Grinding the Batter:**
- Drain the soaked urad dal and grind it in a mixer or wet grinder to a smooth and fluffy batter. Add water as required.
- Next, drain the soaked rice and fenugreek seeds and grind them to a smooth batter.
- Mix both batters together in a large bowl.
3. **Adding Ragi Flour:**
- Add the ragi flour to the batter and mix well until there are no lumps.
- Add water as needed to get an idli batter consistency (neither too thick nor too thin).
- Add salt to taste and mix well.
4. **Fermentation:**
- Cover the batter and allow it to ferment for 8-10 hours or overnight in a warm place.
5. **Steaming the Idlis:**
- Once the batter is fermented, stir it gently.
- Grease the idli plates with a little oil and pour the batter into the molds.
- Steam the idlis in an idli steamer or pressure cooker (without the weight/whistle) for about 10-12 minutes or until a toothpick inserted comes out clean.
6. **Serving:**
- Remove the idlis from the plates using a spoon.
- Serve hot with coconut chutney, sambar, or any side dish of your choice.
