Ras Malai Rolls
Ingredients
Rabri
• Full fat Milk 1 L
• Saffron (Zafran) 6-7 strands
• Green cardamoms 3-4
• Sugar 2 tbsp or more
Khoya
• Milk powder 1/2 cup
• Full fat milk 1/2 cup
• Sugar 1/4 cup
• Ghee 1 tbsp
• Fresh cream 1/2 cup
• Pistachio chopped 2 tsp
Rolls
• Bread slices 5 (up to 8)
• Rose petals
• Pistachios
Preparation
1. Rabri: Put 1 L of milk and saffron in a pot and bring to boil.
2. When the milk starts boiling add green cardamoms and sugar and mix.
3. Turn the flame a bit low and cook the milk until reduced to less than half. Make sure to keep an eye on the milk as it can burn quickly. Keep stirring occasionally.
4. Khoya: In another pan, add milk powder, full fat milk, sugar, ghee and fresh cream.
5. Whisk until lump free.
6. Cook on low heat, stirring frequently, until the mixture becomes thick and leave the sides of the pan. Consistency should be like thick desi ghee.
7. Transfer the khoya to a bowl and add chopped pistachios. Mix and cover the khoya.
8. Rolls: Remove the crust of the bread slices using a knife.
9. Roll the bread using a rolling pin to half of its thickness. Do not roll the bread too much otherwise it will not absorb milk.
10. Now apply the khoya on the bread slice and roll the slice nicely and place in a serving dish.
11. Repeat for all the bread slices.
12. When the rabri milk has reduced to less than half, turn the flame off and add the leftover khoya. Mix and pour the rabri on the ras malai rolls.
13. Cover and allow to refrigerate for 3-4 hours.
