I love macaroni salad. I love dill. Why wouldn't I like a dill pickle salad?
Dill Pickle Pasta Salad
½ lb (3 c) dry shell pasta, cooked al dente, rinsed under cold water.
½ c dill pickle juice
¾ c slicked dill pickles
2/3 c diced cheddar cheese
3 T diced onion
2 T chopped fresh dill
2/3 c mayo
1/3 c sour cream
1/8 t cayenne
4 T dill pickle juice
Salt and pepper to taste
Soak cooked pasta in ½ c pickle juice for 5 minutes, then drain. Mix dressing ingredients well and toss with pasta and remaining ingredients. Chill for at least 12 hours before serving.
