📋 INGREDIENTS:
• 400 g (14 ounces) beef fillet (in one piece or two medallions)
• 1 tablespoon olive oil
• 1 tablespoon butter
• Salt & freshly ground black pepper
• 2 sprigs of fresh thyme
• 2 sprigs of rosemary
• 2 cloves of garlic

For the red wine shallot sauce:
• 4 shallots
• 250 ml (1 cup) dry red wine
• 100 ml (⅓ cup) beef stock
• 1 teaspoon sugar
• 1 tablespoon butter
• 1 teaspoon balsamic vinegar

Preparation steps:
1 Prepare the meat: Take the beef fillet out of the refrigerator 30 minutes before roasting and season with salt and pepper.
2 Frying: Fry the fillet on both sides in a hot pan with olive oil. Add butter, garlic, thyme and rosemary and pour the flavoured butter over the meat.
3 Cooking: Depending on the desired degree of doneness, let the meat cook at a low heat (e.g. for medium-rare, about 4 minutes). Then wrap in aluminum foil and leave to rest.
4 Prepare the sauce: Finely dice the shallots and caramelize in the pan with butter and sugar. Deglaze with red wine, add the beef stock and reduce. Season to taste with balsamic vinegar, salt and pepper.
5 Serving: Cut the beef fillet, pour the red wine and shallot sauce over it and enjoy.
This dish goes perfectly with side dishes such as potato gratin or creamy celery puree. Perfect for a romantic dinner or festive occasion!
