📋 INGREDIENTS:
• 2 beef fillets (approx. 200 g / 7 oz each)
• 1 tablespoon butter
• 1 tablespoon olive oil
• Salt, black pepper
• 2 sprigs of rosemary
• 2 sprigs of thyme
• 2 garlic cloves (crushed)
For the sauce:
• 200 ml (¾ cup) red wine (strong, e.g. Cabernet Sauvignon)
• 150 ml (⅔ cup) beef stock
• 4 dried figs (cut into small pieces)
• 1 tablespoon honey
• 1 teaspoon balsamic vinegar
For the caramelized shallots:
• 6 shallots
• 1 tablespoon butter
• 1 - 3 teaspoons brown sugar
• 50 ml (¼ cup) red wine
• 1 pinch of salt
