Choose a thick cut of cod. the loin or the posta are ideal for baking.
Check the cod label! Check that you are buying "Gadus Morhua", authentic cod. Unfortunately it is a very common scam, to sell other salted fish instead of the authentic one.
How to desalt cod:
First wash off all visible salt, prepare a container with cold water and submerge the piece of cod. It has to be completely submerged. Change the water every 8 hours for two or three days, depending on the thickness of the cod. The water must be very cold. Keep the container in a cool place or even in the refrigerator.

1 large onion.
3 garlic cloves.
2 bay leaves.
Cherry tomatoes, 200 g.
Black olives.
