XO醬西蘭花炒帶子
材料:
急凍帶子10粒
西蘭花1個
XO醬
處理:
1. 急凍帶子,清水解凍。
2. 西蘭花,切細舊,用粗鹽1茶匙加入清水浸5分鐘,去蟲滋。
3. 帶子已解凍,用已煲滾的水浸3分鐘。
4. 帶子已浸好,擎乾水。
5. 西蘭花已浸好,擎乾水。
6. 西蘭花,大火煲滾1鑊水,加入粗鹽1茶匙及油1茶匙,煮3分鐘。
7. 西蘭花已烚好,擎乾水。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 加入西蘭花炒1分鐘。
3. 排好西蘭花在碟上。
4. 大火在鑊中燒熱油2湯匙。
5. 加入帶子,大火炒。
6. 冚蓋1分鐘。
7. 倒去鑊中的油。
8. 加入調味料:
a. XO醬1湯匙
b. 糖1茶匙
9. 帶子,大火快炒1分鐘。
10. 完成,排好在碟上。
11. 可享用。
Stir frying scallops with broccoli and XO sauce
Ingredients:
Frozen scallops 10 Nos.
Broccoli 1 No.
XO sauce
Preparation:
1. Frozen scallops, defrost with tap water.
2. Broccoli, cut in small pieces. Mix cooking salt 1 tsp with tap water, soak for 5 minutes to remove small insects in it.
3. Scallops, have been defrosted, soak in boiled~up water for 3 minutes.
4. Scallops have been soaked well, hang dry.
5. Broccoli has been soaked well, hang dry.
6. Broccoli, heat up a wok of water at high flame. Put cooking salt 1 tsp and oil 1 tsp, cook for 3 minutes.
7. Broccoli has been soaked well, hang dry.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put broccoli, fry for a minute.
3. Put it in row on plate.
4. Heat up oil 2 tbsp at high flame in wok.
5. Put scallops, stir fry at high flame.
6. Cover up the wok for a minute.
7. Pour away the oil in wok.
8. Add seasoning:
a. XO sauce 1 tbsp
b. Sugar 1 tsp
9. Scallops, stir fry at high flame for a minute.
10. Complete. Put in row on plate.
11. Serve.
