Trilece is a dessert with deep roots in Latin America, which has recently gained immense popularity in Turkey. This cake, whose name literally means "three milks," is a symbol of refinement and culinary perfection. Here's how to prepare one of the most beloved versions of this dessert, which will surely impress you:

🥄 Ingredients:
For the Sponge Cake:
1 cup + 2 tablespoons flour
1 baking powder
2 vanilla extracts
5 eggs (separated into yolks and whites)
125 ml boiling water
1 teaspoon salt
1 teaspoon cream of tartar
1 cup sugar
For Soaking the Cake:
800 ml fresh milk
400 ml heavy cream (30% fat)
1/3 cup sugar
For the Cream Topping:
500 ml whipping cream
For the Caramel Syrup:
1.5 cups sugar
150 ml boiling water
1 tablespoon cornstarch (heaping)
250 ml cold water
For Decoration:
Sweetened condensed milk
🥄 Preparation:
Making the Sponge Cake:

Mix the sifted flour with baking powder and vanilla.
In one bowl, beat the egg yolks with half the sugar until the mixture becomes pale. Slowly add the boiling water to the yolks, then mix in the dry ingredients.
In another dry bowl, beat the egg whites with the salt and cream of tartar until soft peaks form, then add the remaining sugar.
Carefully fold the egg whites into the yolk mixture using a spatula.
Pour the batter into a 29x37 cm baking pan lined with parchment paper and bake at 160°C (without a fan) for 25-30 minutes.
After the cake has completely cooled, turn it out onto the same baking pan and remove the parchment paper.
Soaking the Cake:

Mix the fresh milk, cream, and sugar. Pour this mixture over the cake and let it sit in the refrigerator for about 30 minutes.
Preparing the Cream Topping:

Whip the cream until it becomes thick and spread evenly over the soaked cake. Return the cake to the refrigerator.
Making the Caramel Syrup:

Caramelize the sugar over medium heat until golden. Carefully add the boiling water to the caramel, removing the pan from the heat to avoid splattering. Return to the heat and stir until the caramel dissolves.
Mix the cornstarch with 250 ml cold water and add to the caramel, stirring until it thickens to a liquid cream consistency.
Strain the syrup and allow it to cool completely before pouring it over the cake.
Decoration:

Pour the caramel syrup over the trilece and return to the refrigerator for 10 minutes.
Create lines of condensed milk on top of the caramel and use a toothpick or knife to create beautiful patterns.
