भातासाठी |For making Biryani Rice
बिर्याणी तांदूळ १ किलो |Biryani long grain rice 1 kg
शहाजिरे १ टीस्पून | Shaha Jira 1 tsp
दालचिनी २ |Cinnamon 2 inch
तमालपत्र २-३ | Bay leaves 2-3
लवंग ७-८ | Cloves 7-8
काळी मिरी ७-८ | Black pepper 7-8
हिरवे वेलदोडे ४-५ | Green Cardamom 4-5
मसाला वेलदोडे २-३ | Black Cardamom 2-3
चक्रफुल २-३ | Star Anise 2-3
मीठ ४ टेबलस्पून | Salt 4tbsp
अर्ध्या लिंबाचा रस | Juice of a half lemon
कांदा तळण्यासाठी | For frying ingredients
तेल १५० - २०० ग्राम | Oil 150 - 200 grams
उभा पातळ चिरलेला कांदा ६-७ (५०० ग्राम) | Thinly slices onions 6-7 (500 gram)
काजू १०-१२ | Cashews 10-12
बेदाणे १०-१२ | Raisins 10-12
बिर्याणीसाठी भाज्या | Vegetables for biryani
गाजर १ कप (१०० ग्राम) | Carros 1 cup (100 gram)
फ्लॉवरचे तुरे २ कप (३०० ग्राम) | Cauliflower florets 2 cups (300 grams)
बटाटा २ कप (३०० ग्राम) |Potatoes 2 Cups (300 grams)
मटार १ कप (१५० ग्राम) | Peas 1 cup (150 grams)
फरसबी १ कप (१५० ग्राम) | Beans 1 cup (150 grams)
मसाला करण्यासाठी | for making Biryani Masala Gravy
तेल १० टेबलस्पून (१०० ग्राम) | Oil 10 tbsp (100 grams)
साजूक तूप २ टेबलस्पून (२० ग्राम) | Ghee 2 tbsp (20 grams)
जिरे १ टीस्पून | Cumin 1 tsp
दालचिनी १ | Cinnamon 1
लवंग ७-८ | Cloves 7-8

बारीक चिरलेला कांदा ३ मध्यम (200 gms) | Finely chopped onions 3 med (200 grams)
बारीक चिरलेला टोमॅटो ४ मध्यम (200gms )| Finely chopped tomatoes 4 med (200 grams)
आले लसूण पेस्ट ४ टीस्पून | Ginger Garlic paste 4 tsp
उभी चिरलेली हिरवी मिरची ७-८ |Slit Green chilies 7-8
हळद १ टीस्पून | Turmeric 1 tsp
बेडगी मिरची पावडर ३ टीस्पून |Bedgi Chilly pw 3 tsp
गरम मसाला पावडर २ टीस्पून |Garam masala pw 2 tsp
धने पूड २ टीस्पून | Coriander pw 2 tsp
ताजे दही २ कप (४०० ग्राम) | Fresh Curd 2 cups (400 grams)
पुदीने पाने २०-२५ | Mint Leaves 20-25
कोथिंबीर चिरलेली १/२ कप | Finely Chopped coriander ½ cup
तळलेला कांदा १/२ कप | Fried onions ½ cup
How to make veg biryani recipe | how to make veg dum biryani recipe -
To Make Biryani Rice -
Wash and soak the rice for a minimum of 30 mins.
Heat up water into a large vessel, to this add all the whole spices, mint leaves & fresh coriander leaves & bring them to boil.
Once water starts boiling, boil it for 2 mins on high flame
them remove the spices from the water, add salt & lemon juice to the water & stir
then keep the gas flame to high, add soaked rice to the boiling water & stir gently
Keep the gas flame to high and wait for the boil
once water starts boiling again, stir once, keep the gas flame high & boil the rice for about 7-8 mins on high flame.
After 7-8 mins, when you see rice is cooked 80% turn off the flame, immediately drain out the excess water from the rice, keep the rice onto the strained for 10 mins, then spread into a large plate & allow it to cool down, or you can keep it in the refrigerator.
To make Biryani Gravy -
Heat up a kadhai, add oil & ghee to the kadhai
Once oil is hot fry vegetables one by one on high flame only (Expect peas)
Make sure you only fry vegetables until they get light grill marks, don't fry too much
When you fry all the vegetables, into the remaining oil add cumin seeds & all the whole spices & saute them for 15 seconds
Then add chopped onions & fry until they get soft.
then add ginger garlic paste, slit green chilies & saute for 2-3 mins
Then add tomatoes, some salt & cook until tomatoes gets soften (you can cover and cook tomatoes)
Then add powdered spices, half of the fried onion, fresh curd and some water & saute for 2-3 mins.
then add mint leaves, coriander leaves, fried vegetables, pease, salt to taste & mix well
Cover and cook the vegetables for 10-12 mins on low flame & turn off the flame.
Biryani Layering -
Into a heavy bottom pot / biryani pot, add some fried onion oil at the bottom.
Layer the biryani as shown in the video
Cover the biryani pot tight.
keep the flame high for 2 mins, then heat up a flat tava, put the biryani pot onto the tawa, keep the flame to low & cook on very low flame for 15-20 mins.
