Yogurt:
8 cups of whole milk
2 TBL of plain Greek yogurt

Sheet Pan Pancake or Toaster Pancakes:
3 cups flour (I half whole and All purpose flour)
2 TBL baking powder
3 TBL Sugar
1 1/2 tsp salt
3 eggs
1/3 cup coconut oil
3 cups of milk
Line an 18"x'"13 Baking sheet with parchment paper and drizzle with oil. Pour pancake mix into pan and sprinkle with toppings. Bake at 350 degrees for 20 to 30 minutes or until slightly golden and pancake is cooked through.

Grandma's Maple Syrup
1 cup water
1 cup white sugar
1 cup brown sugar
1 tablespoon maple flavored extract

Healthy Berry Sauce:
This is approximate. I never measure it.
About 2 cups of frozen berries
1/4 cup of water
Boil about 5 minutes.
Take off heat and add 1/4 cup of honey and 2 TBL of chia seeds. Blend with immersion blender. Store in fridge.

Mustard:
1 cup organic mustard seeds https://amzn.to/40H1JOZ
1/4 cup water
1/4 cup vinegar
Soak all ingredients together in a bowl for two days. The mustard seeds will soften. Blend in food processor with 1/2 tsp salt. Add more vinegar or salt if you want. Blend until you are happy with consistency. I blended mine for 10 minutes. This is a grainy mustard.

Mayonnaise:
1 cup Avocado oil ( this is a mild tasting oil compared to olive or coconut)
1 egg
Pinch of salt
1tsp vinegar or lemon juice
1tsp of mustard (optional)
Add flavors like Saracha sauce to spice it up!

Tartine Country Bread loaf -recipe for pizza dough
700 grams water
200 grams leaven (bubbly sourdough starter)
1,000 grams flour total -900 white flour, 100 whole wheat
20 grams salt
Mix together, autolyze for 30 minutes. Stretch and fold for 2 hours. Ferment for 4 to 6 hours. Divide the dough into 400 gram balls (about 5). Wrap up and freeze. The morning you are ready to use, let the dough though in a bowl, covered on the counter.

Sauerkraut:
5lbs cabbage- about 2 large
3 Tbl salt
Shredded cabbage in food processor. In a large bowl combine salt and cabbage. Message until juices come out. Let sit 10 minutes. More water will come out of the cabbage. Place in quart jars or crock. Cover with large cabbage leaves. Press down with weights. The Sauerkraut should be completely submerged in its juices. Add boiled water if needed. Cover and sit on counter for 5 to 7 days.
