#15 Cozy Scandi Weekend | Baking my favourite picknick cake | Slow Living in Sweden

Hello everyone and a warm welcome to our silent vlog. Today we share our Cozy Scandi Weekend on the Swedish west coast where you can come along with us on our picnic in a forrest with a white sea of wood anemones. I bake a gluten- and sugar-free poppy seed cake with lemon flavor for the picnick basket. Since spring finally has arrived we bring out our garden furniture. We also drop by our local fruit- & berry factory to fill up our fridge with frosen berries. Finally we prepare for our Valborg dinner i the greenhouse by smoking prawns while the sun sets.

GLUTEN- AND SUGAR-FREE CAKE WITH LEMON AND POPPY SEEDS

Ingredients:
3 dl almond flour
1/2 dl sweetener
1 tsp vanilla paste
100 g room temperature butter
2 egg yolks
2 egg whites
1 tsp baking powder
The peel of 1 organic lemon
Juice from 1/2 lemon
Barely 1/2 dl poppy seeds

This is how I do it:
Set the oven to 150 degrees
Grease a small sugar cookie tin and dust with almond flour
Beat the egg whites stiffly and set them aside
Beat Butter, sweetener and vanilla paste white and fluffy
Add one egg yolk at a time while whisking
Add almond flour, baking powder, poppy seeds, lemon zest and lemon juice
Beat to a batter
Mix (do not beat) a little of the egg whites into the batter and then add the rest of the egg whites
Mix well
Pour the batter into the sugar cookie tin
Leave the sponge cake in the oven for about 40 minutes
Take out and let cool
