2 pieces of pork shoulder or leg
1 piece pork breast or pork cheeks.
Spices for 1 kg of meat
1 g of dried onion
1.5 g of white pepper
1.5 g of granulated garlic
0.5 g of coriander
1 g of white mustard
0.5 g of nutmeg
4 g of sugar
16 g of dry milk
50 ml of ice water
50 ml of broth with 50 g of boiled skin or 50 ml of ice water with 1 teaspoon of gelatin.
7.5 g table salt
7.5 g of nitrite salt.
