Etarnik (offal sausage) was once a very popular sausage, especially in winter, when the villagers had fresh offal. I want to achieve two things with this film. First: Let me show you a recipe with which you can diversify your homemade sausages. Second: to revive the interest in this old, Bulgarian sausage.
Products:
0.5 kg of pork liver
1 pork spleen
2 pork kidneys
0.4 kg fried bacon (greaves)
0.5 kg of pork trimmings from the head
1-2 stalks of finely chopped leeks
red pepper (coarsely ground) to taste
savory to taste
