It features a filling of red bean paste, chewy mochi, meat floss, and salted egg yolk, all wrapped in a flaky, sesame-coated pastry. Unlike traditional baked mooncakes, this one offers a unique and rich flavor.

Today, we also made a pandan mung bean paste flavored version. If you prefer, you can substitute the red bean paste with taro paste. This recipe makes 8 delicious 3Q mooncakes.

➡️ Mochi balls (麻糬球)
45g Glutinous rice flour 45克 糯米粉
35g Rice flour 35克 粘米粉
20g Corn starch 20克 玉米粉
30g Sugar 30克 糖
180ml Milk 180毫升 牛奶
18g Corn oil 18克 玉米油

➡️ Filling Ingredients (馅料成分)
7 Salted egg yolks 7个 咸蛋黃
(Mash & divide into 8 portions 压成泥分成八份)
Mochi 麻糬 - 20g x 8
Red bean paste 豆沙 30g x 4
Pandan mung bean paste 班兰豆蓉 30g x 4
80g Meat floss 80克 肉丝

➡️ Water skin dough (水皮面团)
160g Plain flour 160克 普通面粉
1 tsp Icing sugar 1茶匙 糖粉
70ml Water 70毫升 清水
55g Butter 55克 牛油

➡️ Shortbread dough (油酥面团)
100g Plain flour 100克 普通面粉
65g Shortening 65克 白油

➡️ Topping (装饰)
2 Whole eggs 2个 全蛋
Black & White sesame seeds 黑白芝麻
