So easy - all the great flavors of classic apple pie with the crispiest crust you can imagine (with store-bought puff pastry).
Ingredients:
1 sheet frozen puff pastry
2-3 apples, peeled (I used 2 medium-size Granny Smiths)
2 Tbsp. brown sugar
2 Tbsp. granulated sugar
2 Tbsp. lemon juice
1/2 tsp. vanilla extract
Pinch of salt
Pinch of ground cinnamon
3 Tbsp. butter, cut into small cubes
Directions:
Preheat oven to 400F (204C). Cut the sheet of puff pastry into 4 equal squares and arrange on a parchment or silicone baking mat lined baking sheet. Refrigerate puff pastry until ready to use. Peel and halve the apples then remove the cores with a knife or melon baller. Slice into 1/4 inch slices and toss with the sugars, lemon juice, vanilla extract, salt, and cinnamon until coated. Reserve the remaining sugar/juice mixture. Arrange the apple slices on the puff pastry squares then dot with the cubed butter. While the tarts bake, reduce the sugar/juice mixture by about half. Bake tarts 25-30 minutes or until the edges of the puff pastry are golden brown and nicely puffed. Remove from oven and glaze with the reduced sugar/juice mixture.
