THM Burrito Bowl (E or XO)
Burrito Mix (this can be frozen)
• 2 cups pre-cooked brown rice
• 2 cups Cauli Rick2 (15 oz cans) black beans drained
• 1 8.5 oz corn kernels drained
• 1 TBSP chili powder
• 1 + ½ tsp cumin powder
• ½ tsp Mineral Salt
• Precooked chicken breast
Single Serve Add in choices:
finely chopped lettuce
• Up to 4-6 oz chicken breast (cooked)
• large handful fresh cilantro
• 1/8 avocado (E) or 1/2 avocado for XO
• salsa
• diced onion
• jalapenos diced
• 1/2 - 1 lime Juiced
• 1 dollop greek yogurt
Assemble Bowls and Enjoy!
