Catering Special Perfect Mutton Dum Biriyani Recipe In Malayalam | Malabar Mutton Dum Biriyani
Ingredients
mutton- 1kg
turmericpowder-1/4tsp
pepper powder-2tsp
salt
garammasala -1tsp
onion-5nos
fennelseed -1tsp
greenchilly -7nos
garlic-2ball
tomato-3nos
ginger-1pc
curd-3/4cup
mint and coriander leaves chopped-1cup
small rice-5cup biriyani kaima rice
dum process
ghee-1sp
sunflower oil- 3tbsp
whole spices
cashews
mint and coriander leaves
milk-1cup
turmericpowder-1/4sp
mutton to be cooked first. for that take a cooker and put mutton to it. add garammasala, greenchilly, salt sunflower oil, turmericpowder and pepper powder to it. cook well.
onion, cashews and raisins to be fried in oil.
gravy
take a pan and add oil used for frying onion. Then add ginger garlic greenchilly paste to it and saute well. then add whole spices to it and saute well. then add onion to it. saute well. then add tomato to it and saute well. then add turmericpowder to it and saute well. Then add curd to it and mix well.then add garam masala and pepper powder to it and mix well.Then add cooked mutton to it and take some stock from it. then add cook it well. you can add badam paste to it.
then add coriander leaves and mint leaves to it. then off the flame.
then place a pan on the stove for cooking rice. then add ghee to it. add sunflower oil and whole spices to it. ginger garlic paste to it. 10cup water to be added including mutton stock.
then add salt to it when water boils and add cleaned rice to it. then close it and cook the rice well.

place a pot and add mutton gravy to it and add rice in layer by layer with coriander leaves, mint leaves, fried onion, cashews and ghee. Then add milk mixed with turmeric powder to it and close the pot tightly fot half an hour. then off the flame.
