Recipe for Chocolate Muffins. Fluffy and addictively delicious!
NECESSARY PRODUCTS:
flour - 1,140 kg. (sifted)
salt - 2 tsp.
sugar - 4 tbsp.
dry yeast - 22 gr.
warm water - 200 ml.
warm fresh milk - 400 ml.
proteins - 4 pcs.
yolks - 2 pcs.
oil - 120 ml.
cow butter - 60 g (at room temperature)
liquid chocolate - 400 g.
yolks - 2 pcs. (for spreading)
sugar for sprinkling
METHOD OF PREPARATION:
Sift the flour and form a well. Add the milk, water, sugar and yeast. Wait for the yeast to swell for about 10 minutes. Add the oil, egg whites, yolks and start kneading. When dough begins to form, add salt and butter. You should get a smooth and very fluffy dough. Cover the dough with a clean cloth and leave to rise for 1 hour at room temperature.
Divide the risen dough into two equal parts. Roll into a circle about half a centimeter thick. Divide into 12 equal parts with a pizza knife. Put some liquid chocolate at the end of each piece and roll. Arrange the rolled buns in a tray with greased baking paper. Cover again with a towel for another half hour.
Beat the yolks to spread with a little oil, and grease the rolls. Sprinkle each bun with sugar. Bake in a preheated oven at 180 degrees, without a fan for about 25 minutes.
