==============
Daepajeon (2 sheets)
[Ingredients]
2 stalks (200g) green onions
about 1 cup (160ml) water
2/3 cup (100g) minced pork
about 1 cup (100g) Korean pancake mix
about 1/4 cup (42g) cooking oil
about 2/3 tbsp (14g) minced garlic
1 (10g) red chili pepper
1 (10g) Cheongyang pepper
some (4g) flavored salt
2 eggs
some black pepper
[Directions]
1. Quarter the green onions lengthwise. Then, chop into thirds or quarters with the diameter of the frying pan in mind.
2. Chop the Cheongyang pepper and red chili pepper on the diagonal into 0.3cm pieces.
3. In a bowl, make the batter by thoroughly combining the Korean pancake mix, water, minced garlic, flavored salt, minced pork, and black pepper using chopsticks.
4. Slightly beat the eggs and set aside.
5. Add the green onions, Cheongyang pepper, and red chili pepper to the batter and thoroughly combine.
Tip: Save a third of the Cheongyang pepper and red chili pepper for garnish.
Tip: When combining the batter, make sure the green onions stay parallel to each other.
6. Generously coat the frying pan with cooking oil and set to medium heat.
7. Spread the daepajeon batter evenly onto the frying pan.
8. When the bottom is cooked, pour the eggs evenly over the jeon and garnish with Cheongyang pepper and red chili pepper.
9. Flip the jeon to cook both sides evenly. Once the jeon is cooked, turn up the heat to get a golden brown color.
Tip: If there is too much oil before flipping the jeon, use a paper towel to absorb the oil to avoid splattering.
10. Plate the daepajeon and serve.
