Today, I made a rich gateau pumpkin cake using pumpkin, which is in season right now, to bring out the true flavor of pumpkin.
After preparing the ingredients, the rest is up to the mixer and the oven.
I used fat-free milk and yogurt (fat-free) to keep the fat content low, but the richness of the pumpkin and the large amount of pumpkin in the cake made it very rich.

┃ Ingredients ┃
NET250g Pumpkin
15g oat flour
2 eggs
50g Lakanto Monkfruit Sweetener
180ml nonfat milk
30g yogurt (fat-free)
Less than 1 teaspoon rum
┃ How to make ┃
1, Prepare pumpkin, cut into 3-4cm cubes, place in a heatproof container, cover lightly with plastic wrap and microwave at 600w for 3 minutes 30 seconds.
2, Prepare a blender and add 250g net pumpkin, 180ml fat-free milk, 2 eggs, 50g lakanto, 30g yogurt (fat-free), and a teaspoon of rum.
3, Add 15g oatmeal powder and stir again.
4, Line a cake pan with a cookie sheet and pour in the batter.
5, Bake in a preheated oven at 180 degrees Celsius for about 40 minutes.
6, Cool in a refrigerator until done.
