This time, Chef So from Roushouki, the first shop to introduce pork buns to Japan, showed us how to make pork buns at home.

- Ingredients
[Dough]
250g weak flour
50g strong flour
8g baking powder
30g sugar
2g salt
6g dry yeast
170ml lukewarm water
18g lard

[Filling]
200g ground pork
2 shiitake mushrooms
50g shelled shrimp
50g bamboo shoots
1 bunch of komatsuna (Japanese spinach)
50g vermicelli (re-hydrated with hot water)
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp potato starch
10g Chinese soup stock
Salt and pepper, to taste
Grated ginger, to taste
Grated garlic, to taste
A dash of sesame oil
