Good Neighbor Corn Soup
4 c fresh or frozen corn kernels (1# bag of frozen)
1/4 c. chopped onion
2 Tbsp butter
1/2 tsp salt
1/4 tsp pepper
4 Tbsp unbleached all purpose flour
2 c good chicken stock (no MSG if using packaged)
2 c milk
8 ounces sharp cheddar, shredded *
4 oz can chopped green chilies
1/2 c cooked uncured bacon, chopped
In a large saucepan or stockpot sauté the corn and chopped onion in butter over medium heat until the onion is clear. Add salt, pepper and flour and stir well to make a roux (a paste) and continue cooking for another minute. Gradually add chicken stock and milk and stir until it gets smooth and thick. Reduce heat and add cheese, green chilies and chopped bacon. Enjoy!
* I am not a fan of pre shredded cheese of any kind on anything. It is coated in cellulose and it sometimes compromised the texture of foods, particularly cooked soups. Just buy that block of cheese and shred it or cut it into tiny pieces!
