Hi, see you again.
Whole wheat flour has low gluten, so it stays elastic for longer... so it is suitable to use the Autolysis method...

Ingredients :
400 gr whole wheat flour
250 ml warm water
(total water 300 ml)

40 gr powdered sugar
30 gr powdered milk
5 grams instant yeast
5 grams of salt
30 grams butter

Bake at 190°C...or adjust to each oven.
