Ingredients
Truffles
1 Cup Cottage Cheese
1/4 Cup Baking Cocoa
2 Tbsp Allulose
1 tsp Coconut Flour
Pinch of salt
Chocolate topping
1/2 Cup Sugar free Chocolate Chips
1 tsp Coconut oil
Directions
First squeeze out all of the liquid from your cottage cheese then put it in your blender and pulse until smooth
Transfer it to a mixing bowl and add the rest of the ingredients. Go slow when you add the cocoa powder to make sure that you’re not getting it too thick. Also make sure to test the sweetness to see if it’s perfect
Once the batter is complete, let it rest in the refrigerator for 2 to 4 hours
Once you’re batter is cold roll it into small balls
To make your chocolate coating place chocolate chips and coconut oil into a bowl and microwave in 30 second increments while stirring in between until it is melted.
Dunk your balls into the melted chocolate until they were nice and covered and placed on a parchment lined baking sheet immediately sprinkle some salt over the top before it hardens.
Allow it to cool in the freezer until it is set
Store in an airtight container or bag in the freezer
